Chicken biryani

1.5 cups of basmati rice

2 cloves

2 cardamom pods

2 cups of water

1 cup of chicken stock

1/4 cup of plain yogurt

1/4 cup of chopped cilantro

Salt, to taste

Oil, for cooking

Instructions:

1. Rinse the basmati rice several times and soak it in water for about 30 minutes.

2. In a large pot, heat some oil over medium heat. Add the onions and cook until soft and translucent, about 3 minutes.

3. Add the chicken to the pot and cook for about 5 minutes or until browned and cooked through.

4. Add the red and green bell peppers, garlic, and ginger paste to the pot and cook for about 3 minutes.

5. Add the cumin powder, coriander powder, garam masala, turmeric powder, chili powder, cinnamon stick, cloves, and cardamom pods to the pot and stir to combine.

6. Drain the water from the basmati rice and add it to the pot. Stir to combine with the chicken and vegetables.

7. Add the water, chicken stock, and salt to the pot and stir to combine. Bring the mixture to a boil, then reduce the heat to low and cover the pot.

8. Cook the rice for about 15-20 minutes or until tender and fluffy.

9. In a small bowl, mix the yogurt and cilantro together.

10. Once the rice is cooked, remove the pot from the heat and let it sit for about 5 minutes.

11. Serve the biryani hot with a dollop of the yogurt and cilantro mixture on top.
